About Daniel A. Jacobo-Velázquez
aniel Jacobo is an associate professor, researcher, and technological entrepreneur from the School of Engineering and Science and the Institute for Obesity Research at Tecnologico de Monterrey. He is a member of the National System of Researchers (SNI) and the Mexican Academy of Sciences. He is a member of the Institute of Food Technologists and the American Chemical Society, where he serves as an associate editor for the scientific journal ACS Food Science and Technology.
The Jacobo Lab, set at Tecnologico de Monterrey, Campus Guadalajara, is focused on
developing technologies to improve the health benefits of fruits and vegetables and on
designing foods that can be used as medicine to prevent and treat obesity and other chronic
and degenerative diseases such as diabetes, hypertension, cancer, and neurodegenerative
diseases.
